<br />
In the interest of my health, there is a person in my life with whom I have cut off all contact. It was absolutely necessary. That person, however, has continued to visit this page in an attempt to figure out my whereabouts. And I do not feel comfortable with that.<br />
<br />
I have so enjoyed writing this blog and interacting with its readers, and it saddens me that this person has ended that for me. I am sad, especially, because I loved this blog's name.<br />
<br />
As the saying goes, though, I think this is for the best. I have become increasingly interested in health living, and a girl can only eat so much buttercream. <br />
<br />
And to the person at whom this post is directed, I forgive you. But that is all.<br />

<span style="font-family: "Trebuchet MS", sans-serif;"></span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">A chocolate buttercream layer cake, coconut cupcakes with cream cheese frosting, and a lemon-pistachio tart. </span><br />
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">Todd and I decided to make everything the morning of the party - a lot to begin with, but in addition, we were unfamilar with two of the recipes, including the layer cake. The sum </span><span style="font-family: "Trebuchet MS", sans-serif;">of which made for a fun, action-packed day in which we <strong>"sampled" about a cup of buttercream. Each. Okay, Todd had more than me.</strong></span></div>

<div style="text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br /></div>
<div style="text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">In these situations, it helps to take comfort that the universe will pull through for you</span><span style="font-family: "Trebuchet MS", sans-serif;">. It also helps to know that I have a few tricks up my sleeve to help me along the way. While there's no substitute for practice, here are a couple of things I rely on to kick things up a knotch:</span></div>
<div style="text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;"> </span></div>
<div style="text-align: left;">
<strong><span style="font-family: "Trebuchet MS", sans-serif;">Ingredients</span></strong></div>
<div style="text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">- Measure accurately. You're probably way ahead of me on this. When I made the </span><a href="http://foodfortodd.blogspot.com/2012/03/salmon-with-lemon-pepper-sauce-and.html" target="_blank"><span style="font-family: "Trebuchet MS", sans-serif;">Pistachio-Lemon Tart</span></a><span style="font-family: "Trebuchet MS", sans-serif;"> last weekend, I measured the flour incorrectly. Twice. In the same exact way. And I didn't figure out until I rolled out the dough. As a rule, if you're baking in AZ and the dough comes together perfectly with only the amount of liquid called for by the recipe, </span><a href="http://www.chow.com/food-news/youre-doing-it-all-wrong/" target="_blank"><span style="font-family: "Trebuchet MS", sans-serif;">you've done it wrong</span></a><span style="font-family: "Trebuchet MS", sans-serif;">.</span></div>
<div style="text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">- Substitute <strong>vodka</strong> from the freezer for water. It will make the dough flakier. In a good way.</span></div>
<div style="text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br /></div>
<div style="text-align: left;">
<strong><span style="font-family: "Trebuchet MS", sans-serif;">Handling</span></strong></div>
<div style="text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">- Use a </span><a href="http://www.amazon.com/Regency-Pastry-Cloth-Rolling-Cover/dp/B000I1YFHK" target="_blank"><span style="font-family: "Trebuchet MS", sans-serif;">pastry cloth and rolling pin sock</span></a><span style="font-family: "Trebuchet MS", sans-serif;">.</span></div>
<div style="text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">- Transfer your rolled out dough from the pastry cloth to the pie/tart pan by <strong>carefully folding it into fourths</strong> then placing it in the center of your baking dish</span></div>
<div style="text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;">- When removing a false bottom tart pan from the oven, <strong>gently hold the pan from the sides, not the bottom.</strong> If you hold the pan on the bottom, the center will pop up and the ring will slide down your arm like an oversized bracelet, etching second-degree burns into your forearm. Just trust me on this one.</span></div>
<div style="text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br /></div>
<div style="text-align: left;">
<strong><span style="font-family: "Trebuchet MS", sans-serif;">HAPPY BAKING!</span></strong></div>
<div style="text-align: left;">
<span style="font-family: "Trebuchet MS", sans-serif;"></span><br /></div>

Take a look:</span><br />
<div class="separator" style="clear: both; text-align: center;">
<span style="font-family: "Trebuchet MS", sans-serif;"><iframe allowfullscreen='allowfullscreen' webkitallowfullscreen='webkitallowfullscreen' mozallowfullscreen='mozallowfullscreen' width='320' height='266' src='https://www.youtube.com/embed/XMY5xpp1LzQ?feature=player_embedded' frameborder='0'></iframe></span></div>
<br />
<span style="font-family: Trebuchet MS;">That's right - 1-0-0 burpees! Taking a hint from Zuzanna, I split the 2 sets of 50 into 5 sets of 10 burpees (and 2 sets of 50 for the air squats).</span><br />
<span style="font-family: "Trebuchet MS", sans-serif;">I also did an easy 45 minutes on the stationary bike (mostly to listen to Radio Lab...).</span><br />
<br />
<span style="font-family: Trebuchet MS;">Some recent eats:</span><br />

After breaking my femur in 2006, I developed a mental block towards certain activities. Running was one of them. Although Todd and I ran through the neighborhood a couple of times, I decided to stop it because it made my knees and ankles hurt.</span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">After talking with the trainer yesterday and remembering what I've heard from orthos, it's finally sinking in that a little pain is normal for someone in my situation. So today I gave the treadmill a try (easier than running on concrete, don't have to watch for cars). I hopped on the treadmill, did a 5 minute warmup then ran at 5.5mph for 20 minutes (no incline).</span><br />

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">I definitely felt some pain, but I worked through it, and now, 3 hours later, I don't feel any pain. <span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Some recent eats:</span></div>
<div class="separator" style="clear: both; text-align: left;">

<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">My surprise date for Todd was yesterday, and it turned out amazing! A few weeks ago, I emailed <b>Tia of Fit Pro, LLC</b>, asking if she could <b>make Todd and I sweat like crazy and feel like we want to die for an hour. And she delivered</b>. </span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Todd has always said he's not the kind of person who enjoys working out, so I wasn't sure how he'd feel about our "date." But Tia made it really fun with game-like challenges, and we learned ways to incorporate partnership into our workouts. I couldn't believe it when Todd kept saying how much fun he had! I guess he can like working out after all!</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">We also learned quite bit, especially: (1) </span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">the importance of <b>warming up before our ZWOWs</b>, (2) that <b>it's OK to have a little bit of pain while working out</b>, and (3) that <b>great bodies are made in the kitchen</b>. </span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<br />
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Her tips have already made us think, like I'd like to<b> try running again </b>(something I never thought I could do after I broke my femur) since Todd and I can do it together and it gets us out of the gym. And although To</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">dd and I tend to think we eat healthy, thinking about it yesterday, we realized we could eat better. Although <a href="http://foodfortodd.blogspot.com/2012/05/barefoot-contessas-cheddar-dill-scones.html">cheddar dill scones </a>and <a href="http://foodfortodd.blogspot.com/2012/05/your-best-chocolate-chip-cookies.html">chocolate chip cookies</a> are treats, it definitely seems like treats like those have been appearing more regularly ;)</span></div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
<br /></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">For dinner, we went to the new Sushi Garden on Broadway. Which was also a hit with the hubs. The interior design i</span>s a huge improvement from their old place, and the staff is super attentive!</div>

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">It's been unseasonably cool this weekend, so yesterday Mr. Food for Todd and I woke up super early to hike <b>Blackett's Ridge</b>, a beautiful moderate-intensity trail well-known among Tucson hikers. </span></div>
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">We hiked it in just over 2 hours, which made me feel strong but also reminded me how amazing our bodies are! Plus, <b>major bonus points for not seeing any rattlers</b>! </span></div>
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<img src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEizJevH3jq38SliFKuzFZPtC8TOs8s1Csn26GOMMluxORfB-dxEgUDGke_9qVCp1iv1QGXZHRM0YzdTR_Eter3-ChLfPF9nH-dN419KoxS0rpXkwYtAkj4X-IKXW5PV01qToCJKmC4tZJo/" /><br />
<br /></div>
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Blackett's is my current favorite trail - I've been there 3 times already, and it's incredible. We had lunch at <b>Beyond Bread</b> then checked out <b>Dragoon Brewing</b> in the evening. The whole day reminded that Tucson really is a cool city and that we're lucky to live here. I feel if you find your niche (hiking, biking, yoga, lindy-hop ;) ), Tucson will treat you well.</span></div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"></span><br />

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">
After getting up early yesterday, we had a lazy Sunday morning:<br /><br />Aeropress coffee </span><br />
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">+<br />Blue cornmeal pancakes (cream 2T butter, 2c cornmeal, 1t of salt. Add 1c milk, some water and that's it!) (Todd dipped his in honey).</span></div>

<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">About a million years ago, in March, I made beef and beer carbonnade for Todd's birthday dinner. </span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>

<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Beef and beer carbonnade is Todd's favorite meal, so I always like to make it :) But it's also a great meal for a dinner party because you can guarantee it's delicious and it makes your house smell amazing while everyone is hanging out before dinner.</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEghNOz_HoaC9xumnrRKG0NeMs7LovKcpcEa-dkEz6GNpADchBuuR1qZTvdtYrWmMwNLEZE4hVqNiexYyXnay89r1px7IpWXbmjz8uSxaVH3uQWCe83Kp6CPqfYC_6CDQm5z8XdD_SIvTD0/s1600/100_1311%5B1%5D.JPG"><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><img border="0" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEghNOz_HoaC9xumnrRKG0NeMs7LovKcpcEa-dkEz6GNpADchBuuR1qZTvdtYrWmMwNLEZE4hVqNiexYyXnay89r1px7IpWXbmjz8uSxaVH3uQWCe83Kp6CPqfYC_6CDQm5z8XdD_SIvTD0/s400/100_1311%5B1%5D.JPG" /></span></a></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">A few notes: this meal can get expensive fast. I bought chuck roast since it was Todd's birthday, but next time I'll use a less expensive cut. Authentic Belgian beer is probably at least $5, but next time I may very well use Blue Moon.</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">I served this over a bed of mashed potatoes with roasted, crunchy, salty brussel sprouts. In the past, I've served this over sweet potato fries, and I've also seen it served over egg noodles, but mashed potatoes soak up the juices nicely. </span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">

<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Overall, this is a husband-pleasing, dinner-party-worthy meal, but be mindful that it will be at least three hours before it's ready. </span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<b><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Beef and Beer Carbonnade </span></b></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">From Simply Recipes, Serves 6</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">3 1/2 lbs chuck roast, cut into 1-inch pieces</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Salt and freshly ground black pepper</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">4 Tbsp butter</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">3 medium yellow onions sliced about 1/4 inch thick (about 8 cups)</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">3 Tbsp all-purpose flour</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">1 1/2 cups chicken or beef broth</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">1 1/2 cups (12 oz bottle) Belgian beer</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">4 sprigs fresh thyme</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">2 bay leaves</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">1 Tbsp whole grain mustard</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">1 Tbsp brown sugar</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Pat beef dry with paper towels, then season well with salt and pepper. On the stove top, heat 2 tablespoons of butter in a large heavy bottomed dutch oven over medium-high heat until hot, almost smoking. Working in batches, brown the meat, without stirring, about 3 minutes on each side (do not stir, give the meat an opportunity to brown well). Transfer browned beef to a separate bowl.</span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: left;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Add 2 tablespoons butter to dutch oven; reduce heat to medium. Add the onions and 1/2 teaspoon of salt; cook until onions are browned, about 15 minutes. Add flour and stir until onions are evenly coated and flour is lightly browned, about 2 minutes. Stir in broth, scraping pan bottom to loosen browned bits; stir in beer, thyme, bay, browned beef with any of the accumulated juices, and salt and pepper to taste. Increase heat to medium-high and bring to a full simmer. Reduce heat to low, partially cover, let cook for 2-3 hours until beef is fork tender. (Alternatively can cook in the oven at 300°F.) Stir occasionally, scraping up anything that is sticking to the bottom of the pan. About half an hour before it finishes cooking, add the mustard and brown sugar. <span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">What's your favorite cookie? One time I made chocolate chip cookies for Todd - I didn't try them, but Todd seemed to like them. Not thinking they were anything special, I tossed the recipe and forgot about it. A couple months later, Todd told me they were the best cookies he's ever tasted(!). Unbelievably, I've never been able to re-find the recipe, so I tend to think the best cookie recipe is still floating around somewhere on the internet... (If I absolutely had to pick a recipe, though, it'd be <a href="http://foodfortodd.blogspot.com/2011/12/chewy-peanut-butter-cookies-with.html">these!</a>) </span></div>

<b>Herb & Lemon Buttered Popcorn</b></div>

</span><div style="text-align: left;">
<br /></div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
1/4 cup olive oil</div>
</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
3/4 cups popcorn kernels</div>
</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
6 tablespoons butter</div>
</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
2 teaspoons freshly squeezed lemon</div>
</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
zest of 1 lemon</div>
</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
1/2 teaspoon coarsely ground black pepper</div>
</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
1 teaspoon salt</div>
</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
1/2 teaspoon dried oregano</div>
</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
1/2 teaspoon dried tarragon</div>
</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
1/2 teaspoon dried thyme</div>
</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
1 teaspoon red pepper flakes</div>
</span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
1/3 cup chopped almonds </div>
</span><div style="text-align: left;">
<br /></div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
Place a large, heavy pan with a lid on medium heat. Add the olive oil and 3 kernels. When they pop, add the rest of the kernels. Shake the pan to distribute, then cover it. Cook, shaking the pan occasionally, until you stop hearing kernels pop more than once every five seconds or so. Turn off the heat and leave the cover on for another 2-3 minutes, until all of the kernels have popped. Transfer the popcorn to a large bowl.</div>
</span><div style="text-align: left;">
<br /></div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
While the kernels are popping, preheat the oven to 300°F degrees. Line a baking sheet with parchment. Set aside.</div>
</span><div style="text-align: left;">
<br /></div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
Melt the butter in a small frying pan over medium heat. Keep cooking it, stirring occasionally, until it is very slightly golden. Pour into a bowl and add the lemon juice and zest, the pepper, salt, and spices (and a couple tablespoons Parmesan cheese??). Mix well, then drizzle this over the popcorn in the bowl. Add almonds and use your hands to mix the popcorn well, trying to get the butter mixture spread around as best as possible. Taste for salt, adding more as needed.</div>
</span><div style="text-align: left;">
<br /></div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
Pour the popcorn onto the prepared baking sheet. Bake until the popcorn has dried out slightly, about 6-8 minutes.</div>
</span><div style="text-align: left;">
<br /></div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><div style="text-align: left;">
Serve warm or room temperature. If you make the popcorn in advance, cool it completely before storing it in an airtight container.</div>

<br />
<span style="font-family: Arial, Helvetica, sans-serif;">Good evening, bloggies! Hope you had a great weekend. Ours was filled lindy-hop, tacos, and a surprise rendez-vous with friends while purchasing our solar viewers for the eclipse :) We started off at the 7th Avenue food truck event then cruised over to Barrio to see the moon take a bite out of the sun and relax with friends.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">As you may know, Mr. Food for Todd and I like mac and cheese <a href="http://foodfortodd.blogspot.com/2011/08/g-mas-famous-mac-and-cheese-this-time.html" target="_blank">a lot</a> (OK, <a href="http://foodfortodd.blogspot.com/2012/02/mac-and-cheese-with-goat-cheese-and.html" target="_blank">a lot a lot</a>), but with the cheese and buttah and occasional <i>quart of cream</i>, it's not something we make all the time. This mac and cheese is different though. While it calls for 2 cups of cheese, it's still pretty wholesome and a unique way to get some good avocado fat into your day!</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">Plus, it comes together lightening-fast, doesn't require any chopping, and is just as tasty the next day :) Don't miss out on this one!</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">1. Bring water to a boil in a large pot. Salt the water and add in macaroni. Stir and cook until Al Dente, about 8-10 minutes. Drain and set aside.</span></div>

<span style="font-family: Arial, Helvetica, sans-serif;"><br />2. While the pasta is cooking, make the avocado sauce by placing the garlic, avocados, lime juice, cilantro, salt and pepper into a food processor or blender. Process until smooth and creamy. <span style="font-family: Arial, Helvetica, sans-serif;">Hi bloggies! I hope you're having a great weekend! </span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">We saw <i>The Avengers </i> yesterday, and I woke up super early this morning to make these scones to share with friends ...</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span></div>

<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">I know it's pretty risky to debut a new recipe when you're the one in charge of bringing the food, but Barefoot Contessa has never let me down. Even with a few minor miscalculations, everybody still loved these. </span><span style="font-family: Arial, Helvetica, sans-serif;">For instance, I had only 3/4 cup of dill, I used extra sharp yellow instead of white cheddar, and the scones were pretty misshapen. </span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">Todd and I are off to the gym to do ZWOW 16! It's looks like we're gonna push ourselves pretty hard for this one! </span></div>

<span style="font-family: Arial, Helvetica, sans-serif;"><b>Cheddar Dill Scones</b></span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;"><i>Barefoot Contessa, makes about 16</i></span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;"><i><br /></i></span></div>
<div style="text-align: center;">
<b><span style="font-family: Arial, Helvetica, sans-serif;">Ingredients</span></b></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">4 cups plus 1 tablespoon APF, divided</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">2 tablespoons baking powder</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">2 teaspoons salt</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">3/4 pound cold unsalted butter, diced</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">4 extra-large eggs, beaten lightly</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">1 cup cold heavy cream</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">1/2 pound extra-sharp yellow Cheddar, small-diced</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">1 cup minced fresh dill</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">1 egg beaten with 1 tablespoon water, for egg wash</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: center;">
<b><span style="font-family: Arial, Helvetica, sans-serif;">Directions</span></b></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">Preheat the oven to 400 degrees F.</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">Combine 4 cups of flour, the baking powder, and salt in the bowl of an electric mixer fitted with a paddle attachment. Add the butter and mix on low speed until the butter is in pea-sized pieces. Mix the eggs and heavy cream and quickly add them to the flour-and-butter mixture. Combine until just blended. Toss together the cheddar, dill, and 1 tablespoon of flour and add them to the dough. Mix until they are almost incorporated.</span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: center;">
<span style="font-family: Arial, Helvetica, sans-serif;">Dump the dough onto a well-floured surface and knead it for 1 minute, until the Cheddar and dill are well distributed. Roll the dough 3/4-inch thick. Cut into 4-inch squares and then in half diagonally to make triangles. Brush the tops with egg wash. Bake on a baking sheet lined with parchment paper for 20 to 25 minutes (depending on thick they are & how crusty you want them), until the outside is crusty and the inside is fully baked.</span></div>

Even though it's been quiet on the blog, things have been busy around here :) I'll catch you up up on some stuff!</span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><b>Zuzana's Workout of the Week (ZWOW)</b></span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Have you ever heard of <a href="http://www.bodyrock.tv/">BodyRock</a>? It's a vlog where superfit people post short, high-intensity workouts. Although you can do the workouts at home, many of them require special equipment like BodyRock sandbags and modified pull-up bars. </span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Although we had been lifting weights and doing consistently for 4 months, we didn't see any results. About 3 weeks ago, though, I found out Zuzana, one of the former BodyRock hosts, started her own youtube channel that doesn't require any special equipment, so Todd and I decided to give it a shot. Each workout takes less than half an hour, but Zuzana makes you sweat! Since they're so short, I think they'd be great especially for any one with a busy schedule! I've done a video a day for the past week - no results yet ;) but I'll let you know if I see any changes! <b><i>Here are some of my favorite ZWOWs so far:</i></b></span><br />

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><b>Other stuff </b></span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">I'm working in DC this summer! I'll give you the deets in another post, but yay!! </span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Our best friends are moving back to their homeland next week, which is seriously the saddest thing ever (for me hahaha), especially because I've been so busy studying I haven't seen them much recently. Their going away party is this weekend, and then that's it :( Tearsssss!!!! </span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">One final down, two finals to go then 3L. 3L? Wow. I can't believe I've spent my entire married life in law school - it's gone by so quickly! I'm excited to see where the next couple of years take us! Todd and I have a few tricks up our sleeves and whole list of fun projects to attack once we're both outta school :)</span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">I'm planning a special date for Todd and me that I pretty much think is going to be the funniest thing ever. And Todd may hate me for it. I'll let you know!</span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">See you soon with more posts! xoxo, J</span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">P.S. I just noticed my like two sentence post about how I taped the federal rules of evidence flowchart to my wall as art is now one of my most popular posts hahaha. People must be searching for free evidence flowcharts online. Love the finals.</span>Jenniferhttp://www.blogger.com/profile/15644082484829187504noreply@blogger.com0tag:blogger.com,1999:blog-106179337769092617.post-25562029958763103762012-03-18T19:24:00.001-07:002012-03-18T19:29:04.248-07:00Stubb's Sauce Chicken Sandwich (the butcher's recipe)<div class="separator" style="clear: both; text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Last week, I had a major breakthrough at the grocery store. And by that, I can only be talking about the fact that the butcher and I are now on a first-name basis.</span></div>
<div class="separator" style="clear: both; text-align: center;">

<div style="text-align: center;">
<br /></div>
<div style="text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><b>Here's what you do</b>: buy a rotisserie chicken. Take off the skin then shred the chicken with your hands. Add chopped green onion. Add Stubb's wing sauce (go easy, it's spicy!). Mix. Toast two slices of sourdough bread. On a plate, spoon some of the chicken mixture onto one slice of bread and place the other slice of bread next to it. Heat in the microwave then place the other slice of bread on the chicken mixture.</span></div>

<div style="text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Admittedly, that's not exactly what the butcher said. I think the butcher butters the bread then adds cheese and grills everything on the stove. Our version probably came out a bit drier than his, but I liked it just fine. Sorry, that's an understatement. This sandwich was amazing, one of the best things I've had all year (<a href="http://foodfortodd.blogspot.com/2012/03/salmon-with-lemon-pepper-sauce-and.html">this</a> and <a href="http://foodfortodd.blogspot.com/2012/01/turkey-lettuce-wraps.html">this</a> are the other two). </span><span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">And I don't even like sandwiches. </span></div>
<div style="text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">As a note, I've never used Stubb's sauce before, but as you can see by the bottle, it's clearly legit. Actually, I really have no idea, but the butcher told us to use this brand, and after eating this sandwich, I put my faith in his hands.</span></div>Jenniferhttp://www.blogger.com/profile/15644082484829187504noreply@blogger.com0tag:blogger.com,1999:blog-106179337769092617.post-9892431898640880022012-03-08T23:22:00.003-08:002012-03-12T07:12:15.406-07:00Salmon with Lemon-Pepper Sauce and Arugula-Herb Salad and Pistachio-Lemon Tart<div style="text-align: center;">

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div style="text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Yesterday night we made a delicious meal. It was seriously classy stuff. Sockeye salmon with honey, shallots, lemon juice and zest topped with greek yogurt and an arugula salad with dill, tarragon and more lemon juice and zest. Not being a licorice fan, I wasn't sure I'd like the tarragon, but this meal was <i>incredible</i>. Like the <a href="http://foodfortodd.blogspot.com/2012/02/mac-and-cheese-with-goat-cheese-and.html">mac and cheese with goat cheese and rosemary</a>, I could definitely see this on a restaurant's menu, like maybe The Abbey?</span></div>

<div class="separator" style="clear: both; text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">To mix up the brown basmati rice, we used chicken stock instead of water then mixed in turmeric and onion powder and topped with parsley. That simple!</span></div>

<div class="separator" style="clear: both; text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">It would be an understatement to say that we've been on a pistachio kick recently - we've been eating pistachios like it's our job. Needless to say, the ingredients in this tart immediately struck a cord with me. This is a pretty standard tart recipe, although the crust is a little different than those I've made before because it calls for an egg yolk and the filling is just a tad sweeter for lemon tart.</span></div>
<div class="separator" style="clear: both; text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div class="separator" style="clear: both; text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">And do you know this trick? For a flaky crust, make sure to use a pastry mat and sock for rolling and sub vodka for water.</span></div>
<div class="separator" style="clear: both; text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div class="separator" style="clear: both; text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">And one more tip, be careful pulling your hot tart pan out of the oven. When I pulled mine out, the bottom popped up from underneath and ended up hanging on my forearm like a big ring, giving me second-degree burns. seconddegreeburnsfromatartpan#foddfortoddproblems. Please, don't do what I did.</span></div>

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Have you ever cooked at meal at home, tasted it, then thought to yourself, "gee, this tastes like restaurant food"? This pasta, which I promise I cooked myself, tastes like restaurant food in a delicious, sinfully indulgent kind of way. </span></div>

<div class="separator" style="clear: both; text-align: center;">
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">We made this for Valentine's Day and loved it alongside a bottle of burgundy red. Goat cheese and rosemary is a delicious combination, although I just about died when we put an entire quart of heavy cream in the saucepan - that plus eight ounces of goat cheese makes for one rich meal. If I ever have a cream sauce at a restaurant, now I feel like I know how it's done!</span></div>

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Praise, pictures, and more praise - nothing will do these brownies right. You need to make these yourself. I guarantee you will be impressed by how amazing they taste, despite the fact that the closest these brownies get to melted butter and chocolate is one half cup of unsweetened cocoa powder - I am not joking.</span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br />The Medjool dates do wonders to bring everything together, but having made these brownies twice, here are my tips:<br /><br />1. Measure precisely. If you're too generous in measuring the nuts, the brownies won't stick together (I made this mistake last time, but Todd and I still managed to consume the entire pan nearly instantaneously. They'll still come out tasty, just less presentable).<br /><br />2. Ground the walnuts into a paste - let that food processor work! <br /><br />3. Double the recipe (ok, I haven't actually done this, but I'm going to do it next time since my brownies came out thinner than I like).</span><br />

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br />P.S. Have you ever heard that your pasta water won't boil over if you lay a wooden spoon across the top of it? Well, it doesn't work. Please use that information as you see fit.<br /><br /><b>Raw Brownies</b><br /><a href="http://www.acouplecooks.com/2011/09/raw-brownies/">A Couple Cooks</a><br /><br />1 cup walnuts (unsalted) <br />1/2 cup cocoa powder <br />1/8 teaspoon kosher salt or sea salt <br />1 1/4 cups Medjool dates (about 12) <br />1/4 cup almonds (unsalted) <br /><br />Remove the pits from the dates. If the 1/4 cup almonds are not already chopped, place them in a bag and hit them with the back of a spoon to break them into pieces (we’ve found this is easier than chopping).<br /><br />In the bowl of a food processor, place 1 cup walnuts. Process on high until the nuts are finely ground.<br /><br />Add 1/2 cup cocoa powder and 1/8 teaspoon kosher or sea salt. Pulse to combine.<br /><br />Turn on the food processor. As the processor is running, add the dates one at a time. Once all the dates have been added, the mixture should be crumbly but easily formable (it may form into a ball depending on how long you process it). Throw in the almonds and pulse a couple times to combine (if a ball has formed, you can also mix in the almonds in a bowl).</span><br />
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Form the brownies: Line a small square dish with wax paper and press into the desired thickness (don’t worry if it does not fill the entire pan; the brownies are easy to shape). Alternatively, press the brownies into a mini-muffin tin or other mold. Place in the refrigerator or freezer for 5 to 10 minutes to firm up; they can easily be cut when cold.</span></div>Jenniferhttp://www.blogger.com/profile/15644082484829187504noreply@blogger.com0tag:blogger.com,1999:blog-106179337769092617.post-80354912502979805042012-01-16T20:22:00.000-08:002012-01-16T20:22:46.540-08:00Creamy French Onion Soup<div class="separator" style="clear: both; text-align: center;">

<br /></div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Tasting this soup reminded me of the scene in a movie where a hapless cook accidentally uses sugar instead of salt in her recipe. Except here, I followed the recipe exactly. I think the original recipe accidentally instructs you to add 3 tbsp instead of 3 tsp of sugar - and even still, I think that'd be pushing it. So, I adjusted the recipe below to just 1 tsp. </span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Love that my husband still ate the soup anyway, though :)</span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Also, make sure your soup isn't too close to the broiler - it will burn if you try and leave it in there for 7 minutes!</span><br />

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><b>Creamy French Onion Soup </b><br /><i>Give Me Flour</i>, serves 4<br /> <br />4lb varied onions, sliced <br />3 thick slices bacon, chopped <br />1 tsp salt <br />½ tsp pepper<br />1 tsp sugar <br />2oz all-purpose flour <br />½ cup white wine <br />5 cups beef stock <br />Bouquet garni (bay leaf, 1 sprig rosemary, 3 springs thyme) <br />8-12 slices French baguette (preferably from the day before) <br />1-3 garlic cloves <br />5 ox grated Parmesano reggiano <br /> <br />In a large saucepan, sauté bacon in medium high heat until crisp. Add butter and let it melt completely. Add onions, sugar, salt and sauté in medium heat until brown in color and well caramelized. This step may take 30 minutes to an hour and requires some attention. <br /><br />Add flour and sauté for extra 2 minutes, stirring constantly to avoid lumps. Add white wine and keep cooking for 3 more minutes. In this stage, the onions may be looking like a thick batter. So, add beef stock slowly, until the “batter” is completely solved and the soup looks homogeneous. <br /><br />Add bouquet garni, freshly grounded bleck pepper and ajust salt. Continue cooking for about 15 miutes or until soup looks thick and creamy. <br /><br />Meanwhile, prepare the bread. Cut garlic glove in halves and rub the cut face in each slice of baguette. Set them aside. <br /><br />To serve you can either use individual oven-proof soup bowls, bread bowls* or one large casserole dish. Heat the oven (broiler) to 350˚ F. Pour the soup into the dish of your choice, cover with the toast and sprinkle with cheese. Put into the broiler for 5 minutes or until the cheese bubbles and is slightly browned. Serve immediately. Makes 4 servings. </span>Jenniferhttp://www.blogger.com/profile/15644082484829187504noreply@blogger.com1tag:blogger.com,1999:blog-106179337769092617.post-65187276081102004862012-01-04T17:34:00.000-08:002012-01-04T20:35:36.926-08:00Grilled/Sauteed Romaine with Parmesan Cheese and Red Wine Vinegar<div class="separator" style="clear: both; text-align: center;">

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Grilled/sauted lettuce has been popular on my google reader recently, and now I see why - it's a great way to get a ton of vegetables - plus, there's cheese :)</span></div>

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">I sauteed this beastly salad, but I'd also like to try grilling it. Here are two grill options from two of my favorite bloggers:</span></div>

<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /><b>Grilled Romaine with Parmesan Cheese and Red Wine Vinegar</b></span><br />
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Alton Brown</span></div>
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;">Serves 4, if you follow the original recipe or 2 if you just buy romaine lettuce and chop it in half</span><br />
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span></div>
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><u>Ingredients</u><br />1/2 cup red wine vinegar<br />2 hearts of romaine, rinsed and patted dry<br />1 tablespoon olive oil<br />Freshly ground black pepper<br />1 cup finely grated Parmesan<br />Pam</span></div>
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><br /></span><br />
<div>
<span style="font-family: 'Helvetica Neue', Arial, Helvetica, sans-serif;"><u>Directions</u><br />Place vinegar in shallow pan and place in the freezer. Allow the vinegar to freeze, approximately 2 hours. Once frozen, scrape with a fork to create a shaved ice texture. Return the vinegar to the freezer until ready to use.<br /><br />Cut each heart of romaine in half lengthwise so that the root keeps each piece together. Lightly brush the cut side of the romaine pieces with olive oil. Season with the pepper. Place the cheese in a shallow pan large enough to lay the romaine in and press the cheese firmly onto the cut side of the romaine until it adheres.<br /><br />Spray a nonstick griddle or saute pan with vegetable spray and preheat over medium-high heat. Place the romaine in the pan and cook until the cheese turns golden, approximately 1 to 2 minutes Place the romaine, cheese side up onto plates and sprinkle with the vinegar ice. Serve immediately. (I think you could also grill this and just add the cheese at the end before serving. You could also use balsamic instead of red wine vinegar)</span></div>
